Today I’m sharing one of my favorite breakfast recipes! I especially love it since it’s simple, quick & healthy compared to traditional pancakes. I discovered the recipe a few years back from my favorite blogger, Caitlin Covington, from Southern Curls & Pearls.
The original recipe is only three ingredients. Sometimes I’ll add a fourth ingredient, protein powder! Voilà, you have protein pancakes! These are perfect for a post-workout meal.
Without further ado, let’s start cooking!
- 2 eggs
- 1 ripe banana
- 2 tablespoons chia seeds
- 1/2 scoop vanilla protein powder (optional)
*Makes about 5 medium sized pancakes. I always double up on the ingredients though to feed my hungry boyfriend!!
- Syrup (Optional)
- Honey (Optional)
- Berries (Optional
Combine all ingredients in a blender and mix until thoroughly blended.
Turn pan on medium heat. Spray pan with cooking oil, then pour pancake batter onto pan forming into the pancake shape of your choice. Make as big or small as you like until batter is gone.
Serve with your choice of berries, honey, syrup, etc.
